Cheddar Bacon Scallion Cornbread Recipe
Ingredients Needed
- Jiffy Corn Muffin Mix
- Bacon
- Egg
- Sour Cream
- Cheddar Cheese
- Scallions
How to Make Cheddar Bacon Scallion Cornbread
You will need a skillet and an 8 inch round or square baking dish.
- Preheat the oven to 375 degrees and cook bacon in a skillet until browned and crispy. Remove and drain on paper towels allow grease to cool slightly; reserve 2 tablespoons bacon drippings.
- Grease 8-inch baking dish with 1 tablespoon of bacon drippings and when bacon is cooled to touch crumble and sprinkle half of crumbled bacon in the bottom of the baking dish.
- In a medium sized mixing bowl, combine jiffy mix, egg, sour cream, half cheddar cheese and half scallions. Spoon batter over crumbled bacon. Do Not Stir. Top with remaining crumbled bacon and cheddar cheese. Bake in the oven at 375 degrees for 30-38 minutes. Top cornbread with remaining scallions after cornbread has cooled for about 10 minutes.

Get ready to make the batter by prepping the ingredients first: cook the bacon, grease the baking dish and add half of the crumbed bacon, combine all other ingredients in a bowl and stir, spoon batter evenly into the baking dish.

Make ahead, When it comes time for the busy holiday seasons, it takes some culinary skills to ensure food is out on time, warmed and most of all, enjoyed by friends and family.
To save time, make this dish the night before and warm it in the oven along with other sides.
All you have to do is cover the dish loosely with aluminum foil and heat cornbread in the oven at 350 degrees for 10 minutes.
Bacon make ahead tips, Cook bacon ahead of time and blot off any remaining grease with a paper towel.
Wrap bacon slices in paper towels and place in a zip-lock bag or a storage container with a lid.
How to reheat bacon, When ready to use cook bacon in the microwave for 15-30 seconds.
Store bacon drippings ahead of time, Once bacon drippings are cooled slightly pour drippings Into a mason jar or a storage container with a lid.
When ready to use remove drippings from the fridge and measure desired amounts for cheddar bacon scallion cornbread.

Cheddar Bacon Scallion Cornbread
Cheddar Bacon Scallion cornbread is made with Jiffy mix, bacon, cheddar cheese and scallions. This cornbread just might become your favorite!
Ingredients
- 1/2 lb bacon
- 1 8.5 ounce Jiffy mix
- 1 egg
- 1/2 cup sour cream
- 1 cup cheddar cheese, divided
- 2 tablespoons scallions, chopped, & divided
- 2 tablespoons bacon drippings, reserved, & divided
Instructions
- Preheat oven to 375 degrees and cook bacon in a skillet until crispy. Remove bacon and drain on a plate lined with a paper towel; allow grease to cool slightly and reserve 2 tablespoons bacon drippings for cornbread recipe.
- Grease an 8 inch round or square baking dish with 1 tablespoon bacon drippings making sure to coat the bottom well and all sides. When bacon is cooled to touch crumble and sprinkle half of bacon crumbs evenly in greased baking dish. Reserve remaining half to sprinkle on top before adding cheddar cheese.
- In a medium sized mixing bowl, combine Jiffy mix, egg, sour cream, 1/2 cup cheddar cheese, 1 tablespoon bacon drippings, and 1 tablespoon scallions stir until well combined.
- Spoon and spread batter evenly into pan over crumbled bacon. Do not stir! Top with remaining bacon crumbles and cheddar cheese. Bake in the oven at 375 degrees for 30-38 minutes.
- Remove cheddar bacon cornbread from oven and allow to cool for 10 minutes before topping with remaining scallions. Serve with butter or honey if desired.
Notes
- Batter will be on the thicker side: But is intended to be; when cooked in the oven cornbread comes out perfect.
- If you'd like a thinner batter: Stir in two tablespoons melted butter.
- To make cheddar bacon scallion cornbread muffins stir in 1/3 cup milk.
- Make ahead: To save time you can make this dish the night before and reheat in the oven the day of. Cover dish loosely with aluminum foil and heat cornbread in the oven at 350 degrees for 10 minutes.
