Add enough liquid and butter for moist mac & cheese.

Adding enough milk, butter, and cheese to baked mac and cheese keeps mac and cheese from burning in the oven.

Elbow Noodles: This no boil mac and cheese dish uses elbow noodles. However, you may use any style of noodles for this mac and cheese recipe.

Broccoli. Fresh or frozen broccoli works in this recipe. If using frozen broccoli defrost broccoli in a bowl of warm water. Add to pasta once defrosted.

Cream Cheese. Use brick cream cheese and cut into tiny cubes so cheese melts evenly throughout baked mac and cheese.

Velveeta Cheese. Velveeta cheese is cheesy, creamy, and delicious in this no boil broccoli mac and cheese bake.

White American Block cheese. You may use any style of block cheese in this dish. When making homemade mac and cheese using three different styles of cheese adds more depth to mac and a rich taste.

Butter. Butter is a must, make sure to add enough butter and milk so mac and cheese isn’t dry. Cut butter into tiny cubes and layer throughout.

Milk. Full fat milk is best however, a lower fat milk works just as well and you can also use heavy whipping cream if you’d like.

Chicken Broth. Use store bought chicken broth or chicken bouillon powder. Knorr chicken bouillon powder is a chicken bouillon powder that’s cheap and has less sodium than most bouillon powders.

Ground Mustard. Ground mustard is a spice that brings out all these flavors in this dish.

Salt & Pepper. Freshly ground black pepper and sea salt are a must with mac and cheese. One of my favorite spices to use is McCormick Grill Mates Coarse Black Pepper & Sea Salt is my all time favorite seasoning to use.

How to Make Easy Broccoli Mac & Cheese

Add enough cheese before broiling for a crispy mac and cheese top.
Make sure to add a layer of cheese before broiling.

Chop broccoli, dice cheese, and butter. Chop broccoli and dice into tiny pieces. Dice butter, cream cheese, and velveeta into small cubes.

Grate block cheese. Grate block cheese and set aside. Use half grated cheese in the dish and add the remaining half of the cheese right before broiling.

Add all ingredients to pan & bake. Add divided ingredients to a 13×9 in pan, cover with aluminium foil, and bake until the noodles are softened.

Top mac and cheese with remaining ingredients. Top mac and cheese with remaining velveeta cheese, and melted butter. Bake until cheese is melted. Stir mac and top with remaining grated cheese. Bake on broil until the top layer of cheese is crispy.

Ground mustard helps to reduce cheese taste and adds more flavor to baked mac and cheese. Crushed red pepper flakes or hot sauce can spice up mac and cheese and add a zesty kick to this favorable dish.

And if you’d like seasoning to have less spice try adding minced onion, garlic powder, and paprika to mac and cheese.

Easy (no boil) broccoli mac and cheese is a simple dinner idea and uses one pan to make. This baked mac and cheese dish uses three types of cheese and is a great way to sneak veggies to your kids.

Ingredients

  • 1 block white american cheese, grated, equally, divided
  • 4 oz cream cheese, diced, cubed
  • 8 oz velveeta cheese, diced, cubed, equally, divided
  • 8 tablespoons butter, diced, cubed, reserve 4 tablespoons butter and melt for top
  • 2 cups milk
  • 2 cups chicken broth
  • 16 oz elbow noodles
  • 1 head broccoli or frozen broccoli
  • 1 tablespoon ground mustard
  • 1 tablespoon salt & pepper

Instructions

  1. Wash and rinse broccoli, cut broccoli from stem and dice broccoli heads into tiny pieces.
  2. Dice butter, cream cheese, velveeta, and set aside.
  3. Grate block white american cheese and set aside.
  4. Spray 13x9 in pan with cooking spray.
  5. Add all ingredients to pan with 4 ounces velveeta, half amount of shredded block cheese, and 4 tablespoons diced butter. Sprinkle with seasonings.
  6. Bake covered at 350 degrees for 40 minutes. Remove mac from oven and top with remaining velveeta cheese, and melted butter.
  7. Bake for 10 minutes uncovered at 350 degrees until cheese melts.
  8. Once cheese is melted. Top mac with remaining shredded white american cheese. Broil mac and cheese for 5 minutes for a crispy, cheese top.
