Tips for Making Frito Corn Dip
Make Ahead: Easy Frito corn dip can be made ahead of time and served cold.
Just be sure to add the crushed Fritos to the dip right before serving. This way, the Frito chips keep their crunch!
Make it Spicier: To bring some spicy heat to the corn dip, add finely diced jalapeno pepper with or without seeds. You can also substitute regular flavored Frito chips with one of the spicier varieties.

- Corn: Cold corn dip can be made with canned, fresh or frozen corn. I like to use canned corn since it’s convenient and crisp! Try fiesta corn or white corn to switch things up.
- Cheddar Cheese: What’s a Mexican-inspired dip without cheese? For this dip, use a brick of cheddar cheese and grate it yourself. It tastes way better than the pre-grated kind in a bag.
- Green Pepper: Green pepper adds lovely color to this dip along with a yummy sweet pepper taste.
- Red Onion: Red onion adds a savory bite to corn dip.
- Mayonnaise: Mayonnaise is a must in this recipe! I recommend using full-fat mayo, but you can use a reduced-fat mayo if preferred.
- Sour Cream: This corn dip can be made using only mayo. However, I like a blend of sour cream and mayo, similar to my recipes for Elote with Canned Corn and Flamin’ Hot Cheetos Elote (Cheelotes).
- Fritos Scoops: These salty, crunchy chips are used to season the dip and to scoop up the dip.
How to Make Frito Corn Dip
- In a medium bowl combine drained canned corn, finely diced red onion, diced green pepper, and grated cheese. Stir until ingredients are well combined.
- In a separate bowl, stir together the mayonnaise and sour cream until well blended, then combine with corn mixture.
- Refrigerate the corn dip until ready to serve.
- Top the corn dip with crushed Fritos right before serving and serve with Frito Scoops chips on the side.
Chili Cheese Frito Corn Dip
A popular way to amp up the flavor of classic Frito Corn Dip is to flavor it with Chili Cheese corn chips. It adds a nice smokey taste.
All you have to do is crush up some chips and stir them in the dip. Then right before serving garnish the dip with some more.
For a hotter corn dip, try Jalapeno Cheese Fritos instead.

You really can’t go wrong adding a little of this or a little of that to corn dip.
Here are some of my favorite add-ins.
Vegetables
Jalapeno: For an immense amount of heat add diced jalapeno. Jalapeno with seeds is my choice when adding to dip. Remove seeds if you’d like a mild taste.
Red bell pepper: I love adding red pepper when readily available in my kitchen.
Red pepper is full of vitamin C and adds a bright color to this dish.
Green onion: Green onions are a vegetable I seem to never get enough of.
Any chance I get I love to add green onions to dips, salsa, and soups. Garnish dip with green onions just before serving.
Protein
Black beans: Add black beans for added protein. You may use canned beans or dry beans.
For dry beans follow the cooking directions on the back of the package.
Herbs
Cilantro: Cilantro from the garden is the perfect fresh herb to add to this dip.
Finely chop cilantro and let corn dip marinate in the fridge for the best taste.
Cheese
Cotija cheese: When making Frito corn dip and I am craving elotes. Cotija cheese is a must add to this appetizing dish!
I like to make this dip using Mexican Corn on the Cob ingredients and make this dip an elote corn dip.
It’s mess free and full of Mexican ingredients like finely, chopped, cilantro, chili powder, Tajin.
And of course…. plenty of fresh lime juice!
Pepper jack cheese: For my spicy food lovers! Try pepper jack cheese.
Grate block pepper jack cheese. Cheese quality is better and makes a spicy, hot, corn dip!
Monterey jack cheese: Monterey jack cheese is a milder cheese to use and adds a mild kick to this flavorful appetizer.
Seasonings
Lime juice: Corn dip marinated in fresh lime juice adds tremendous fresh flavor and is a must! If you’re making a Mexican-style corn dip.
Tajin seasoning ( Chili lime salt): Seasoning like chili lime salt is superb on corn!
Taco seasoning: To make a fiesta blend of corn dip try adding taco seasoning.
I love to make a homemade blend.
Anyhow, when in a rush, a taco seasoning packet will do.
Old El Paso is my favorite and has the best-balanced taste of smokey cumin and chili powder.
Chili powder: Add chili powder to corn for a smokey taste.
Corn
Fiesta corn: Try substituting one can of yellow corn with fiesta corn for more flavor.
White corn: I love to use a can of yellow corn and a can of white corn in this corn dip recipe for more dimension.

Frito Corn Dip is an easy-to-make cold dip, filled with corn and cheese and seasoned with crushed Fritos corn chips. It's made just like Frito Corn Salad, but for an easy appetizer, serve the corn dip with Fritos Scoops for dipping.
Ingredients
- 2 (15 ounce) cans corn, drained
- 2 cups cheddar cheese, grated
- 2/3 cup mayonnaise
- 1/3 cup sour cream
- 1 cup green pepper, chopped
- 1/2 cup red onion, finely, chopped
- 1 snack-size bag Frito Corn Chips or Chili Cheese Fritos, crushed
- 1 bag Fritos Scoops for serving
Instructions
- Drain corn, grate cheese, dice green pepper and chop red onion.
- In medium sized mixing bowl combine corn, green pepper, and red onion. Stir until combined. Add in cheese and stir well.
- In small bowl. Stir together mayonnaise and sour cream until well blended.
- Crush the small bag of Fritos using a rolling pin or other heavy object. Stir crushed chips into corn dip, reserving some to garnish dip if desired.
- Refrigerate until ready to serve. When serving top with crushed Fritos. Serve the corn dip with Fritos scoops for easy dipping!
Notes
- Try frozen corn or corn from the cob. Defrost frozen corn if using. Shuck fresh corn from cob, cook corn, and cut corn off the cob.
- Finely dice green pepper and red onion.
