- Use olive oil mayonnaise in replacement of butter. Use olive oil mayonnaise in replacement of butter for grilled cheese when cooking in a pan. Mayonnaise gives bread a crispy, flaky, crust. You can use a full fat mayo or vegan mayo if preferred.

- 8 slices, sourdough, bread
- red pepper jelly
- 4 oz Primo Taglio goat cheese
- 1 cup arugula
- 1 cup spinach
- Mayonnaise
- Italian seasoning
- red pepper flakes (optional)
Instructions
- Allow goat cheese to reach room temperature.
- Spread each side of bread with red pepper jelly.
- Spread goat cheese on top of red pepper jelly and spread evenly on each slice of bread.
- Sprinkle with red pepper flakes if using.
- Layer one side of bread with spinach and one side of bread with arugula. Press sandwich together. Spread mayonnaise on bread slice and sprinkle with Italian seasoning.
- Heat pan to sizzling, hot, on medium heat. Add grilled cheese mayo side down and cook about 3 minutes on each side. Spread mayonnaise on bread and sprinkle with Italian seasoning. Flip and cook until bread is nice and crispy. Enjoy!
Notes
For crisp spinach and arugula add vegetables after you cook grilled goat cheese sandwich. Just pull sandwich apart and top with uncooked spinach and uncooked arugula.
Try adding thinly sliced cucumbers and red onion to this sandwich! If using cucumber sprinkle with salt and let sit for 30 minutes. Pat dry with a paper towel and add to goat cheese grilled cheese.
