Traditional pizza dough can be messy to work with and sometimes it doesn’t come out the best in our home ovens.

But making mini pizzas with flour tortillas is a real time saver.

They come out crispy on the bottom with lots of gooey melted cheese on top. And we all know that’s the best part!

Mini Tortilla Pizzas Recipe

These small pizzas begin with four basic ingredients: tortillas, pizza sauce, cheese and a topping.

To elevate the flavor, I add a few extras.

Here’s what you need.

Ingredients

  • Flour Tortillas
  • Pizza Sauce
  • Mozarella Cheese
  • Mini Pepperonis (or your favorite pizza topping)
  • Olive Oil
  • Garlic Clove
  • Italian Seasoning

Keep flour tortillas, pizza sauce, mozzarella cheese and pepperoni on-hand to make this mini snack whenever you want.

Flour Tortillas: Use extra soft flour tortillas (not corn) for the pizza crust. Get ones that are 7-10 inches in diameter.

Pizza Sauce: Get a good quality pizza sauce. My new favorite is Raos pizza sauce.

Mozzarella Cheese: Get a brick of mozzarella cheese or your favorite pizza cheese, and grate it yourself. The pre-shredded kind never melts as well.

Pepperoni: For our small pizzas, grab a bag of mini pepperoni. If you use regular-sized pepperoni, cut each slice into fourths. (I just make a stack and cut them all at once.)

Olive Oil: My trick for tortilla pizzas that come out crisp is to pre-bake them with some olive oil brushed on.

Garlic and Italian Seasoning: For pizzas beyond sauce and cheese, fresh garlic and seasoning adds another dimension of flavor.

Step-by-Step Instructions

Prep the tortillas and pizza toppings.

  • Pre-heat oven to 400°F.
  • Using a 3″ biscuit cutter, cut small tortilla pizza crusts out of the large tortillas. I was able to get 3 out of each 7″ tortilla.
  • Grate the mozzarella and slice large pepperonis into fourths, unless using the mini kind. Remove the protective leaf (the papery stuff) from a clove of garlic. Set aside.

Brush tortillas with oil and add seasonings.

  • Place the small tortillas on a baking tray and brush each one with a light coating of olive oil. Put in the oven for 2 minutes.
  • Remove the tray from the oven and rub each hot tortilla with the garlic, being careful not to burn yourself.
  • Next, sprinkle a pinch of Italian seasoning onto each tortilla.

Add pizza toppings.

  • Put about 1/2 teaspoon of pizza sauce onto the center of each tortilla. Using the back of a spoon, spread the sauce in a circular fashion towards the edges, but not all the way.
  • Top each pizza with cheese, followed by pepperoni or another topping of your choice. Both the cheese and pepperoni will flow out towards the edge as the cheese melts, so pile these toppings towards the center.
  • Sprinkle on more Italian seasoning, if desired.

Bake until cheese is slightly bubbling.

  • Bake for 4-5 minutes, until cheese is melted and edges are crisp.
  • Remove the tortilla pizzas from tray and place on a serving dish.

Tips for Making the Best Mini Tortilla Pizzas

For crispy tortilla pizza crust the oven temperature needs to be 400-450°F. The goal is to turn a floppy flour tortilla into a crisp, chewy crust, so the oven needs to be hot.

Additionally, make sure to pre-heat the baking sheet and put some olive oil on each pizza.

For the crispiest crust, pre-bake the tortillas for 2 minutes prior to adding the sauce, cheese and toppings.

For perfectly melted cheese, use freshly grated mozzarella on these mini bites. It’s soft and melts fast.

Do yourself a favor, and avoid the pre-packaged shredded cheese. It’s coated with starch or flour to prevent clumping, which also keeps it from melting well.

Not to mention, block cheese is usually cheaper.

For lots of garlic flavor, rub each hot tortilla with fresh garlic before adding other toppings. This is how I make bruschetta and it really adds a pop of flavor.
