Whoops! News sure did travel fast and there was so much buzz about this salad. I just had to see for myself was this salad really that delicious?

The short answer is yes. I can see why people raved about this delicious quinoa salad. The herbs bring a freshness to this dish and the olive oil lemon dressing keeps things simple.

The crisp taste surely seems to be fit for a star and I love that it’s easy to assemble. The only thing I changed was adding less garbanzo beans.

Making this cucumber chickpea salad with crumbled feta cheese is simple and I love a salad that doesn’t involve a lot of prep time.

All you have to do is boil your quinoa chop your herbs and assemble your ingredients.

I do like to season and roast chickpeas because it gives the salad more flavor and crispy chickpeas add more of a crunch to the salad.

Roasting chickpeas in a skillet still only takes about 5-7 minutes and the flavor is definitely worth it!

Lastly, drizzle salad with virgin olive oil and squeeze juice of a lemon.

It doesn’t take much more time and adds a crunch to this dish that’s indescribably good!

All you have to do is sprinkle chickpeas with desired seasoning, drizzle with olive oil, pour in a pan and cook.

How to Make Quinoa Cucumber Chickpea Salad

  • Prepare and wash quinoa. Place quinoa in a collinder and rinse grain under cold water.
  • Boil quinoa. Boil quinoa until cooked. Set aside to cool.
  • Season chickpeas. Season chickpeas with olive oil, salt, pepper, garlic, and paprika.
  • Saute Chickpeas. Saute chickpeas, cook, and set aside.
  • Chop mint and parsley. Chop mint leaves and parsley.
  • Dice red onion. Dice red onion.

Ingredients

  • 1 cup quinoa, rinsed
  • 1/4 cup canned chickpeas or dried (see notes if using)
  • 1 cucumber, seeded, peeled, & diced
  • 1/4 cup red onion, diced
  • 1/4 cup parsley, diced
  • 7 mint leaves, diced
  • 2.5 oz feta, crumbled
  • 1/2 cup pistachios, diced
  • salt & pepper
  • virgin olive oil, drizzled
  • 1 lemon or bottled Lemon Juice

Instructions

  1. Wash and rinse quinoa.
  2. Boil water in saucepan and stir in quinoa.
  3. Once water reaches a boil, cover and reduce heat to low.
  4. Cook on low heat for 12-15 minutes.
  5. Once cooked, remove the lid, fluff quinoa with a fork and add to a salad bowl.
  6. Season chickpeas with olive oil, garlic, salt, pepper, and paprika.
  7. Heat small amount of olive oil in a pan and stir in chickpeas.
  8. Cook chickpeas on medium heat until browned. (About 5-7 minutes)
  9. Peel cucumber, remove seeds, and chop. Chop parsley, mint leaves, and dice red onion.
  10. Add all ingredients to a salad bowl and mix.
  11. Drizzle with olive oil and squeeze fresh lemon over salad.

Notes

You may use bottled lemon juice if that's what you have on-hand.

You may use dried chickpeas. You will need to follow directions on back of the bag for cook time and saute if you'd like chickpeas roasted.
