When it comes to picking the best canned peaches for this recipe, there are three options: packed in their own juice, light syrup or heavy syrup. Any kind will do. It really depends on how sweet you want the peach cobbler to turn out. My preference is light syrup.

Cake Mix: Yellow cake mix is the real time-saver for this cobbler recipe, unlike a traditional peach cobbler topping which requires you to mix together flour, sugar, salt, baking soda and other ingredients. I don’t know about you, but I’m all for using a boxed cake mix.

This easy Peach Cobbler made with cake mix and canned peaches is a snap to make with only 3 ingredients: boxed yellow cake mix, peaches in a can, and butter.

Ingredients

  • 30 ounces canned peaches
  • 1 box yellow cake mix
  • 1/2 cup salted butter

Instructions

  1. Preheat oven to 350°F.
  2. Pour canned peaches and half the syrup or juice into an 8x8 baking dish that has been buttered on the bottom and sides.
  3. Sprinkle the yellow cake mix evenly on top of the peaches.
  4. Melt butter in the microwave or stovetop. Pour butter evenly over the cake mix trying to make sure there are no dry parts remaining. Alternatively, sprinkle half the cake mix over the peaches, then stir together the remaining cake mix and melted butter in a separate bowl. Pour on top of the dry cake mix layer.
  5. Bake for 30 minutes until the top is golden brown. Let rest for 10-20 minutes before serving.

Notes

  • It's best to spoon the cake mix over the canned peaches in multiple layers. This way the first layer can sink down into the peach juice and surround the peaches.
  • To avoid having to deal with trying to get all the dry cake mix covered in butter, put half of the cake mix on top of the peaches as instructed in step 2. Combine the remaining cake mix and melted butter in a bowl, and spread on top of the dry cake mix.
  • Be sure and let this easy peach cobbler rest for 10-20 minutes after baking before serving. This gives the peach juice a chance to thicken.
  • Serve peach cobbler with ice cream or whipped cream. I love it with a sprinkle of cinnamon on top.
